Jack Mylott is a fourth-generation pastry chef whose career brings together classical pastry craft and modern food retail innovation. With more than a decade spent working within some of Sydney’s most respected venues, Jack has built a reputation for thoughtful leadership, technical skill, and a genuine commitment to quality.
Throughout his career, Jack has led pastry teams and contributed to the development of notable venues including Loulou Bistro Boulangerie & Traiteur, The Charles Grand Brasserie & Bar, The Promenade Bondi Beach, and Cirrus Dining each known for shaping Sydney’s contemporary dining scene in meaningful ways.
Jack has been recognised nationally for his work, earning both the Sydney J. Packham Medal (2020) and the National Pastry Champion title (2019). Beyond his achievements in the kitchen, he serves as a NSW Mentor with the Baking Association of Australia and as a national pastry judge, supporting the next generation of aspiring pastry chefs.
Today, Jack brings his craft, experience, and creative vision to Archie’s Popcorn, a design-led retail concept that blends culinary technique with playful storytelling. Through Archie’s, Jack continues to champion food as a source of joy, connection, and memorable moments.
